This software is horribly invasive and it's incredibly shitty that the university is allowing, even encouraging its use, especially in lower division courses with younger students who don't know better to question it. Most importantly, you're not crazy for feeling this way. A good amount of them know about this and need a nudge to actually do anything, having students reach out to them would be extremely helpful for helping them realize people care about this. If not, please reach out to ASUCD senators and the president over email, even just saying something as simple as "hi, this professor is having us use respondus and i dont feel super comfortable with that".
